Black Forest Kirsch & Brownie – the new ice cream from Mälzer & Fu
Tim Mälzer and Chris Boszczyk dedicate an ice cream of their own to the Black Forest
Black Forest Kirsch & Brownie is the new flavour from Mälzer & Fu, with which TV chef Tim Mälzer and streetwear entrepreneur Chris „Fu“ Boszczyk put up a monument to Black Forest gateau in the freezer. The premium ice cream is made by hand in Germany without overrun, comes in a 500 ml tub and is available in Germany exclusively at REWE (in Austria at BILLA).
What is Black Forest Kirsch & Brownie?
Black Forest Kirsch & Brownie is a premium ice cream from Mälzer & Fu that reads the classic Black Forest gateau as an ice cream. The 500 ml tub brings together dairy ice cream with a cream topping, a sour cherry sauce with Black Forest kirsch, pieces of brownie and dark Belgian chocolate. It is produced without overrun, which makes the ice cream particularly dense and creamy.
Ingredients and composition
- Base: dairy ice cream and dairy ice cream with whipped cream (over 55 % milk and cream)
- Sour cherry sauce (11 %) with sour cherry purée (4.5 %), sour cherry juice concentrate and Black Forest kirsch (0.4 %)
- Pieces of brownie (4.5 %) made from wheat flour, egg, butter and cocoa
- Belgian dark chocolate pieces (4.5 %)
- Cocoa: Rainforest Alliance certified
In short: Black Forest gateau in a tub – with the building blocks every grandmother in the Black Forest takes as given: a creamy base, strong cherry notes, juicy pieces of brownie instead of chocolate sponge and a dark chocolate component. At 0.4 %, the kirsch is more of a nod to the gateau than a dominant flavour.
Price and availability: where to buy Black Forest Kirsch & Brownie
Mälzer & Fu deliberately chose a single retail partner: the 500 ml tub is sold in Germany only at REWE, in Austria at BILLA. Edeka, Kaufland and Mälzer & Fu's own online shop do not stock the tubs. The recommended retail price is 6.49 € per 500 ml tub (as of April 2026, according to t-online Hamburg). In the past, individual flavours have occasionally been offered at promotional prices of around 4.79 €.

Two who know ice cream: the brand Mälzer & Fu
Behind Mälzer & Fu stand two people who at first glance have little in common: Tim Mälzer, Hamburg's best-known TV chef with a weakness for honest cooking, and Chris „Fu“ Boszczyk, co-founder of the Munich streetwear labels Beastin and Cayler & Sons and for many years the face of the sneaker and streetwear retailer BSTN. In 2023 the two launched their ice cream brand together, with the ambition of building premium ice cream that combines the extravagance of American ice cream culture with the craft finesse of the Italian gelato tradition. More about the brand on the official Mälzer & Fu website.
How is the ice cream made?
The ice cream is made without overrun – which makes it particularly dense and creamy – is handmade in Germany and sold exclusively in the 500 ml tub. The packaging is more reminiscent of a sneaker release than of the classic supermarket freezer – hardly a coincidence with a co-founder who comes from streetwear (see also our piece on the PUMA x Rothaus Tannenzäpfle sneakers, which play with Black Forest codes in a similar way).
Black Forest gateau as ice cream: what is different
The classic Black Forest gateau consists of dark chocolate sponge, sour cherries, whipped cream and a generous shot of Black Forest kirsch. Black Forest Kirsch & Brownie translates these building blocks into an ice cream context – and sets a new accent at one decisive point.
The key change: the brownie replaces the chocolate sponge. That gives the ice cream a more intense, almost fudge-like chocolate note and brings bite to the tub.
Why this matters for the Black Forest
The Black Forest has an ambivalent relationship with its most famous cake. On the one hand the cherry gateau is world heritage in cream form, on the other it is a little the culinary equivalent of the cuckoo clock – a cliché everywhere, rarely done well. All the more appealing when a brand like Mälzer & Fu takes on the gateau without parodying it: with honest ingredients, a clear signature and a design that deliberately avoids folk-costume romance.
For food lovers from the Black Forest and around it, the flavour is a nice punchline: our cherry gateau is so iconic that it makes its way into the premium ice cream shelf even in Hamburg – putting it in a line with other Black Forest icons that shine far beyond the region, from Monkey 47 gin to Schwarzwald Marie by Playmobil.
